New York Times Reviews Chef From Verona

Chef Mark Papera returned to Montclair earlier this year to the same location, but with a new name, a remodeled dining room and a stubborn determination to get it all right the second time around.

The French bistro Fricassee — Papera's encore to Epernay which also operated at 6 Park Street in the early 2000s — caught the attention of a New York Times food critic who has a lot of nice things to say about the Verona native's cooking. 

The critic particularly liked the fricassee of escargots, roast chicken, pot-au-feu and homemade desserts, according to the review which ran Thursday

Papera, 40, is a 1991 graduate of Verona High School.
